Ingredients

Scale
  • 4 cups fresh or frozen cherries (pitted)
  • 3/4 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup unsalted butter (cubed)
  • 1/2 cup milk
  • 1/4 teaspoon cinnamon (optional)

Instructions

Preheat the Oven:

  1. Preheat your oven to 350°F (175°C).

Prepare the Cherry Filling:

  1. In a medium bowl, combine cherries, 3/4 cup sugar, cornstarch, lemon juice, and vanilla extract.
  2. Toss to coat the cherries evenly and set aside.

Make the Cobbler Topping:

  1. In a separate bowl, whisk together flour, 1/2 cup sugar, baking powder, salt, and cinnamon (if using).
  2. Add cubed butter and use a pastry cutter or fork to mix until the mixture resembles coarse crumbs.
  3. Pour in milk and stir until just combined. Be careful not to overmix.

Assemble the Cobbler:

  1. Pour the cherry mixture into a greased 9-inch baking dish.
  2. Drop spoonfuls of the cobbler batter on top of the cherries, covering as much of the surface as possible.

Bake:

  1. Bake in the preheated oven for 40-45 minutes, or until the topping is golden brown and the cherries are bubbling.

Serve:

  1. Let the cobbler cool for 10 minutes before serving. Serve warm with vanilla ice cream or whipped cream for extra indulgence.
