- 12 oz pasta (rotini or fusilli)
- 1 red bell pepper (1 cup cherry tomatoes, 1 cucumber)
- ½ red onion (¾ cup black olives)
- ½ cup feta or mozzarella (¼ cup chopped herbs)
- ⅓ cup olive oil (3 tbsp vinegar or lemon juice)
- 1 tsp Dijon (1 garlic clove, salt, pepper, oregano)
Instructions
- Cook pasta al dente, rinse under cold water.
- Chop vegetables and herbs.
- Whisk dressing ingredients together.
- Mix everything in a large bowl.
- Chill for at least 30 minutes before serving.
