Sweet Potatoes
- 2 large sweet potatoes (diced)
- Avocado oil spray
- ½ tsp salt
- ½ tsp paprika
- ½ tsp garlic powder
Ground Beef
- 1 lb grass-fed ground beef
- ¾ tsp salt
- 1 tsp paprika
- 1 tsp chili powder
- 1 tsp garlic powder
- 1 tsp onion powder
Bowl Toppings
- 1 large avocado (sliced or diced)
- 16 oz 2% cottage cheese (½ cup per bowl)
Instructions
Air Fry the Sweet Potatoes
- Add diced sweet potatoes to air fryer. Spray lightly with avocado oil.
- Season with salt, paprika, and garlic powder.
- Air fry at 400°F for 18 minutes, shaking halfway for even cooking.
Cook the Ground Beef
- In a skillet over medium heat, cook the ground beef with all spices.
- Sauté for 5–7 minutes until browned and aromatic. Set aside.
Build the Bowl
- In each bowl, add:
- 1 cup roasted sweet potatoes
- 4 oz seasoned ground beef
- ⅓ of a sliced avocado
- ½ cup cottage cheese (blended if desired)
- Top with crushed red pepper and a drizzle of hot honey.
Serve & Enjoy
- Garnish with lime wedges, cilantro, or tortilla chips as desired.
