Ingredients
8 oz medium dried pasta shells
1 tablespoon olive oil
1 medium yellow onion, minced
1 teaspoon salt
5 cloves garlic, minced
1 lb ground turkey (93% lean)
3 tablespoons Italian seasoning
15 oz canned tomato sauce
½ cup starchy pasta water
3 tablespoons tomato paste
2 teaspoons anchovy paste (optional)
¼ cup heavy cream
½ cup grated Parmesan cheese
¼ cup fresh parsley, chopped
Instructions
1. Boil pasta in salted water until al dente. Reserve 1 cup pasta water. Drain and set aside.
2. Sauté onion in olive oil for 2-3 minutes. Add garlic and cook 1 minute.
3. Add ground turkey and Italian seasoning. Cook until almost done.
4. Add tomato sauce and pasta water. Stir well.
5. Add tomato paste and anchovy paste. Whisk until dissolved. Bring to boil.
6. Reduce heat and simmer 4-6 minutes until sauce thickens.
7. Stir in heavy cream until fully combined.
8. Fold in cooked pasta. Stir until coated.
9. Serve with Parmesan and fresh parsley.
