Ingredients
1 box (15.25 oz) lemon cake mix
2 large eggs
β cup vegetable oil (or melted butter for richness)

Instructions
Prepare the Dough
Preheat oven to 350Β°F (175Β°C). Line a baking sheet with parchment paper.
In a mixing bowl, combine lemon cake mix, eggs, and oil until a soft dough forms.
For extra zestiness, fold in lemon zest.
Shape the Cookies
Scoop tablespoon-sized portions of dough.
Roll into balls, then coat generously in powdered sugar.
Bake the Cookies
Place dough balls 2 inches apart on the baking sheet.
Bake for 10β12 minutes, or until edges are set and tops are crackled.
Cool & Serve
Let cookies rest on the baking sheet for 2 minutes before transferring to a wire rack.
