  • Total Time: 15 minutes
  • Yield: 6–8 pinwheels

Ingredients

Scale
  • 4 large flour tortillas (10-inch, soft)

  • ½ cup hummus (classic or roasted red pepper)

  • ½ cup crumbled feta cheese

  • ½ cup cucumber, finely diced

  • ½ cup cherry tomatoes, finely chopped

  • ¼ cup Kalamata olives, chopped

  • ¼ cup red bell pepper, finely diced

  • 2 tbsp red onion, minced

  • 2 tbsp fresh parsley, chopped

  • 1 tbsp extra virgin olive oil

  • ½ tsp dried oregano

  • Salt and black pepper, to taste

Instructions

  1. Spread the hummus evenly over each tortilla, covering the entire surface.

  2. Layer the fillings: sprinkle feta cheese, cucumber, tomatoes, olives, red bell pepper, red onion, and parsley evenly on top.

  3. Season and drizzle with olive oil, oregano, salt, and pepper.

  4. Roll the tortillas tightly from one end to the other to form a log.

  5. Chill for 10 minutes to firm up for easier slicing.

  6. Slice into 1-inch pinwheels using a sharp knife, wiping between cuts for clean edges.

  7. Arrange on a serving platter and garnish with extra parsley if desired.

Notes

  • Make Ahead: Prepare the roll-ups up to a day in advance, wrap in plastic, and slice just before serving.

  • Tortilla Tip: Use fresh, soft tortillas to prevent cracking while rolling.

  • Variations: Try spinach tortillas for extra color or swap hummus for tzatziki for a creamy tang.
