Filling:
- 4 cups chopped rhubarb
- 2/3 cup sugar
- 2 tbsp cornstarch
- 1 tbsp lemon juice
Topping:
- 1 cup oats
- 3/4 cup flour
- 1/2 cup brown sugar
- 1/2 cup butter
- 1/2 tsp cinnamon
- Pinch of salt
Instructions
- Preheat oven to 350°F. Grease a 9×9-inch dish.
- Mix rhubarb with sugar, cornstarch, lemon juice. Add to dish.
- Mix topping ingredients with cold butter until crumbly.
- Spread topping over filling. Bake 35–40 mins.
- Cool slightly. Serve warm or cold.
