Ingredients
-
1 lb ground beef (80/20 for juiciness)
-
4 small flour tortillas (street taco size, warmed)
-
4 slices cheddar or American cheese
-
1 cup shredded lettuce
-
½ cup dill pickles, sliced
-
¼ cup red bell pepper or jalapeños, diced (optional)
-
¼ cup burger sauce (mix mayo, ketchup, mustard, and chipotle or paprika)
-
1 tbsp butter or oil (for tortillas)
-
Salt and black pepper, to taste
Instructions
-
Prepare the beef patties – Divide ground beef into 4 equal balls. Season lightly with salt and pepper.
-
Heat skillet – Place a cast-iron skillet over medium-high heat until very hot.
-
Smash the patties – Add beef balls to the skillet, then smash flat with a spatula until thin and crisp on the edges. Cook 2–3 minutes per side.
-
Add cheese – Place a slice of cheese on each patty and let it melt.
-
Warm tortillas – In another skillet, lightly butter and toast tortillas until golden.
-
Assemble tacos – Place cheesy beef patty directly onto each tortilla. Top with lettuce, pickles, peppers, and a drizzle of burger sauce.
-
Serve immediately – Fold and enjoy while hot!
Notes
-
Use 80/20 beef for the best balance of flavor and juiciness.
-
If you love spice, swap regular pickles for spicy jalapeños.
-
For a lighter version, try ground turkey or chicken.
-
Toasting tortillas in butter adds extra flavor and crisp edges.
-
Make it a party meal by serving with fries or onion rings.
