- 4 cups seedless watermelon (cubed)
- 1/2 cup cucumber (sliced (optional))
- 1/4 red onion (thinly sliced)
- 1/3 cup crumbled feta cheese
- 2 tbsp fresh mint or basil (chopped)
- 1 tbsp olive oil
- 1 tbsp fresh lime juice or balsamic glaze
- Salt and pepper to taste
Instructions
- In a large bowl, combine watermelon, onion, cucumber, and feta.
- Drizzle with olive oil and lime juice.
- Sprinkle chopped herbs, toss gently.
- Chill for 15 minutes and serve cold.
