Ingredients
1 large cucumber, peeled and chopped
1 cup freshly squeezed lemon juice (about 4–6 lemons)
1/2 cup fresh mint leaves
1/2 cup granulated sugar (or honey/agave syrup)
4 cups cold water
1–2 cups ice cubes
Lemon slices and cucumber rounds, for garnish
Extra mint sprigs, for serving
Instructions
Blend Cucumber: Add the chopped cucumber and 1 cup of water to a blender. Blend until smooth. Strain through a fine-mesh sieve or cheesecloth to remove pulp, reserving the juice.
Make Mint Syrup: In a small saucepan, combine 1/2 cup sugar with 1/2 cup water. Heat over medium-low until sugar dissolves. Add mint leaves, steep for 5–10 minutes, then strain.
Combine: In a large pitcher, mix cucumber juice, lemon juice, mint syrup, and the remaining 3 cups of cold water. Stir well and taste for sweetness, adjusting if necessary.
Serve: Fill glasses with ice, pour over the lemonade, and garnish with cucumber rounds, lemon slices, and fresh mint. Serve chilled.
Notes
Sweetener Swap: Use honey, agave, or stevia for a healthier version.
Sparkling Twist: Replace 1 cup of water with sparkling water for fizz.
Cocktail Version: Add a splash of gin or vodka for a refreshing summer cocktail.
