Ingredients
8 oz boneless skinless chicken breast
1/2 tsp cumin
1/2 tsp chili powder
1/4 tsp garlic powder
1/4 tsp salt
1/8 tsp black pepper
1 cup cooked white or brown rice
1/2 cup black beans, rinsed and drained
1/2 cup chopped cherry tomatoes
1/4 cup corn kernels
1/4 avocado, sliced
1/4 cup shredded light cheddar cheese
2 tbsp plain Greek yogurt
1 tbsp fresh lime juice
Instructions
1. Season chicken with cumin, chili powder, garlic powder, salt, and pepper.
2. Cook in a lightly oiled skillet over medium heat for 6-8 minutes per side.
3. Rest chicken 5 minutes then chop into bite-sized pieces.
4. Warm rice and black beans.
5. Divide rice into bowls and add chicken, beans, corn, tomatoes, avocado, and cheese.
6. Top with Greek yogurt and lime juice. Serve immediately.
