  • 2 tablespoons all purpose flour
  • 1/2 cup 2% reduced-fat milk (or fat level of choice)
  • 1 cup low-fat plain yogurt (or fat level of choice)
  • 1 cup shredded cheddar cheese (divided)
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 pound green beans (ends trimmed and cut in half)
  • 1/2 cup panko bread crumbs
  • 1/2 cup parmesan cheese (grated)
  • 1 tablespoon butter (melted)

  1. Preheat the oven to 350°F and grease a 9×13-inch baking pan with butter.
  2. Cook diced bacon in a medium skillet until crisp, then add diced onions and cook until soft for about 4 minutes.
  3. Sprinkle flour over the bacon mixture, cook for one minute, then gradually stir in milk, Greek yogurt, and 1/4 cup cheddar cheese until thickened; season with salt and pepper.
  4. Boil salted water, cook green beans for 5 minutes until tender-crisp, then drain and shock in ice water before patting dry.
  5. Combine panko breadcrumbs, grated parmesan, and melted butter in a small bowl until coated, then set aside.
  6. Mix the bacon mixture with the green beans in a large bowl, spread into the prepared baking pan, and top with remaining cheddar cheese and panko mixture; bake for 30 minutes until golden brown.

Notes

For extra flavor, you can caramelize the onions a bit longer before adding the flour.
