Ingredients
  

  • 12 oz pasta rotini or fusilli
  • 1 red bell pepper 1 cup cherry tomatoes, 1 cucumber
  • ½ red onion ¾ cup black olives
  • ½ cup feta or mozzarella ¼ cup chopped herbs
  • cup olive oil 3 tbsp vinegar or lemon juice
  • 1 tsp Dijon 1 garlic clove, salt, pepper, oregano

Instructions
 

  • Cook pasta al dente, rinse under cold water.
