Ingredients
  

Filling:

  • 4 cups chopped rhubarb
  • 2/3 cup sugar
  • 2 tbsp cornstarch
  • 1 tbsp lemon juice

Topping:

  • 1 cup oats
  • 3/4 cup flour
  • 1/2 cup brown sugar
  • 1/2 cup butter
  • 1/2 tsp cinnamon
  • Pinch of salt

Instructions
 

  • Preheat oven to 350°F. Grease a 9×9-inch dish.
  • Mix rhubarb with sugar, cornstarch, lemon juice. Add to dish.
  • Mix topping ingredients with cold butter until crumbly.
  • Spread topping over filling. Bake 35–40 mins.
  • Cool slightly. Serve warm or cold.
