Easy Pumpkin Pie

There’s no dessert more iconic for Thanksgiving than a beautiful pumpkin pie.

Smooth, creamy, warmly spiced, and set in a flaky golden crust, it’s the slice everyone saves room for. This easy pumpkin pie makes it truly simple.

It uses just 6 ingredients and about 10 minutes of prep. The secret is sweetened condensed milk, which replaces the usual mix of sugar, cream, and evaporated milk in one step. It makes the filling extra rich and silky, and nearly impossible to mess up.

With a store-bought crust and a can of pumpkin, you’ll have a picture-perfect pie in the oven in minutes. It’s perfect for first-time bakers, busy holidays, or anyone who wants a foolproof classic.

A Holiday Classic

Pumpkin pie has been part of North American celebrations for centuries. Recipes for pumpkin baked in pastry appear in cookbooks from the 1600s, and by the 1800s it had become the signature dessert of Thanksgiving. Today it’s just as beloved, and this version makes it easier than ever.

Ingredients You’ll Need

  • Pie crust (1 refrigerated, 9-inch / 23 cm): Thawed according to the package.
  • Pumpkin purée (1 can, 15 oz / 425 g): 100% pure pumpkin, not pumpkin pie filling.
  • Sweetened condensed milk (1 can, 14 oz / 397 g)
  • Eggs (2 large)
  • Pumpkin pie spice (2½ teaspoons)
  • Salt (¼ teaspoon)
Easy Pumpkin Pie ingredients

Why Sweetened Condensed Milk?

Sweetened condensed milk is milk that’s been cooked down until thick, then sweetened. Using it in pumpkin pie gives you three things at once:

  1. Sweetness, with no need for extra sugar.
  2. Creaminess, for a rich, velvety texture.
  3. Reliability, because its thickness helps the filling set smoothly without cracking.

It’s the shortcut that makes this pie so foolproof.

Pumpkin Purée vs. Pumpkin Pie Filling

Always use 100% pure pumpkin purée. Canned pumpkin pie filling already contains sugar and spices. Combined with sweetened condensed milk, it would make the pie far too sweet and overspiced.

Using homemade pumpkin purée? Strain it in a fine sieve for 30–60 minutes first. Fresh purée is much wetter than canned and can make the pie watery.

Homemade Pumpkin Pie Spice

No pumpkin pie spice? Mix your own:

  • 1½ teaspoons ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon ground ginger
  • ¼ teaspoon ground cloves

How to Make Easy Pumpkin Pie

Step 1: Preheat the oven

Place an oven rack in the lowest position and preheat to 425°F (220°C), or 200°C fan. Baking on the bottom rack helps the crust crisp up.

Step 2: Prepare the crust

Fit the thawed crust into a 9-inch (23 cm) pie dish. Crimp or decorate the edges however you like.

Step 3: Make the filling

In a large bowl, whisk together the pumpkin purée, sweetened condensed milk (scrape every last bit from the can), eggs, pumpkin pie spice, and salt until smooth and fully blended.

Step 4: Fill the crust

Pour the filling into the crust and gently wiggle the dish to level it. Place the pie on a baking sheet to catch any drips and make it easier to move.

Optional: Cover the edges of the crust with a ring of foil or a pie shield to stop them over-browning.

Step 5: Bake hot, then lower the heat

Bake on the bottom rack at 425°F (220°C) for 15 minutes. The high heat helps set the crust.

Then reduce the oven to 350°F (175°C) and bake for another 35–40 minutes, until the filling is nearly set.

Step 6: Check for doneness

The pie is done when the edges are set and the center no longer jiggles like liquid when you gently move the pan. The very center may look slightly lower or a touch soft. It will finish setting as it cools.

Step 7: Cool completely

Cool the pie on a wire rack for at least 2 hours before slicing. Cutting it while warm will make the slices messy.

For a chilled pie: Let it cool at room temperature for 1 hour, then refrigerate for 2 hours.

Tips for the Perfect Pumpkin Pie

  1. Bake on the lowest rack for a crisp, golden bottom crust.
  2. Use a baking sheet underneath to catch spills.
  3. Shield the crust edges with foil if they brown too fast.
  4. Don’t overbake. Pull it out when the center is nearly set.
  5. Cool completely before slicing for clean, neat pieces.
  6. Use plain pumpkin purée, never pie filling.

Troubleshooting

My pumpkin pie cracked. It was overbaked or cooled too quickly. Take it out when the center still has a very slight wobble, and let it cool gradually at room temperature. A dollop of whipped cream hides cracks perfectly!

The crust is soggy. Bake on the lowest rack, and with a homemade crust, partially blind-bake it first (see below).

The crust edges burned. Cover them with foil or a pie shield after the first 15 minutes.

The filling didn’t set. It needed more time in the oven. Bake until the center doesn’t jiggle like liquid, and always let it cool for at least 2 hours.

Using a Homemade Crust

Homemade crusts are more likely to turn soggy under a wet custard filling, so partially blind-bake them first:

  1. Fit the crust into the pie dish and chill for 30 minutes.
  2. Line it with parchment and fill with pie weights or dried beans.
  3. Bake at 400°F (200°C) for 15 minutes.
  4. Remove the parchment and weights, then bake for 5 more minutes.
  5. Add the filling and bake as directed.

A frozen deep-dish crust also works. Just thaw it first.

Easy Variations

  • Maple: Drizzle maple syrup over each slice, or stir 1 tablespoon into the filling.
  • Extra spicy: Add an extra ½ teaspoon of cinnamon and a pinch of black pepper.
  • Bourbon: Stir 1 tablespoon of bourbon into the filling for adults.
  • Gingersnap crust: Use a press-in gingersnap or graham cracker crust.
  • Streusel topping: Sprinkle a brown sugar pecan streusel over the pie for the last 20 minutes of baking.

How to Serve Pumpkin Pie

  • Whipped cream: It’s the classic, and you can add a pinch of cinnamon to it.
  • Vanilla ice cream: It’s perfect if you serve the pie slightly warm.
  • Caramel sauce drizzle: Sweet and indulgent.
  • Candied pecans: For a crunchy finishing touch.

Serve it with a glass of my festive Thanksgiving Punch for the ultimate holiday spread.

Make Ahead, Storage, and Freezing

Make ahead: Bake the pie up to 1 day ahead. Let it cool, then cover and refrigerate. Take it out about 30 minutes before serving if you prefer it closer to room temperature.

Refrigerator: Pumpkin pie is a custard made with eggs, so it must be refrigerated. Cover and keep it in the fridge for up to 3 days.

Freezer: Wrap the cooled pie tightly in plastic wrap and foil, or freeze slices in an airtight container, for up to 3 months. Thaw overnight in the fridge.

Frequently Asked Questions

How do I know when pumpkin pie is done?
The edges should be set, and the center shouldn’t jiggle like liquid when you gently move the pan. It may look slightly lower or soft in the very center. It sets fully as it cools.

Does pumpkin pie need to be refrigerated?
Yes. Homemade pumpkin pie contains eggs and dairy, so keep it refrigerated. Some store-bought pies contain preservatives, but homemade ones don’t.

Can I use homemade pumpkin purée?
Yes, but strain it in a fine sieve first to remove excess liquid.

Can I use evaporated milk instead of condensed milk?
Not as a direct swap. Evaporated milk isn’t sweetened, so you’d need to add about ¾ cup of sugar. This recipe is designed for sweetened condensed milk.

Can I make pumpkin pie ahead?
Yes. Bake it up to a day ahead and refrigerate.

Can I freeze pumpkin pie?
Yes, for up to 3 months. Wrap it well and thaw it overnight in the fridge.

Why did my pumpkin pie crack?
It was likely overbaked. Pull it from the oven when the center is nearly set.
