Hearty & Easy Cottage Cheese Stuffed Shells

Ingredients

20-24 jumbo pasta shells
2 cups cottage cheese
1 cup shredded mozzarella cheese (plus extra for topping)
1/2 cup grated Parmesan cheese
1 large egg
2 cups marinara sauce
2 cloves garlic, minced
1 tablespoon olive oil
1/4 cup fresh parsley, chopped
1/2 teaspoon salt
Black pepper to taste

Instructions

1. Cook shells in salted boiling water until al dente. Drain and cool.
2. Mix cottage cheese, mozzarella, Parmesan, egg, parsley, salt, and pepper.
3. Sauté garlic in olive oil for 1 minute.
4. Spread marinara sauce on bottom of baking dish.
5. Fill each shell with cheese mixture and place in dish.
6. Pour remaining sauce over shells and top with mozzarella.
7. Bake at 180°C (350°F) for 25-30 minutes until bubbly and golden.
8. Cool a few minutes before serving.
